Participants will be randomly assigned to one of two study arms: (1) the Intervention Group, which will receive bilingual (Spanish and English) Cal/OSHA educational materials and engage in the Our Voice participatory action research (photovoice) method using a bilingual (Spanish and English) mobile application, or (2) the Control Group, which will only receive bilingual (Spanish and English) Cal/OSHA educational materials. Core outcomes will be measured identically across both groups to allow direct comparison of the two approaches. Using the "Our Voice participatory action research method" and Cal/OSHA educational materials, the investigators will learn about participants' attitudes, behaviors, and actions in response to changing climate in the counties and evaluate whether the education and photovoice approach is more impactful than traditional didactic Cal/Osha education only.",[28],"Air Pollution Exposure",[30,31],"air quality","San Joaquin Valley","NOT_YET_RECRUITING","2026-07-14
2026-07-20","ACTUAL
2026-07-29
2029-05-31
Stanford University","OTHER
"100616926","short-term-health-outcomes-of-cooking-ufp-exposure-100616926","NCT07311967","Short-Term Health Outcomes of Cooking UFP Exposure","UFP","Inclusion Criteria

Adults 18 years of age or older

Able to understand and speak English sufficiently to complete cognitive testing

Able and willing to complete two consecutive study sessions lasting approximately 6 hours each

Able to avoid cooking, toasting, and fume-generating household activities (e.g., strong cleaning products, ironing, hair drying) for 24 hours before each session

Able to avoid tobacco, marijuana, vaping, and alcohol use as specified in the study protocol

Able to provide informed consent

Exclusion Criteria

Younger than 18 years old

Pregnant or planning pregnancy during study participation

Current smoking or use of:

Cigarettes

E-cigarettes or vaping devices

Marijuana

Shisha/hookah

Binge drinking, heavy alcohol use, or inability to abstain from alcohol for 24 hours before study visits

Restaurant chefs or individuals who perform frequent commercial-level cooking

Individuals who cook two or more frying or grilling meals per day at home

Cooking anxiety or mageirocophobia

Any diagnosed neurological disease, including stroke, seizure disorder, multiple sclerosis, traumatic brain injury, dementia, or similar conditions

Any significant respiratory disease, including:

Chronic obstructive pulmonary disease (COPD)

Untreated severe asthma

Chronic bronchitis or other major lung disease

Any significant psychiatric condition, including:

Schizophrenia spectrum disorder

Untreated substance use disorder

Severe mood disorder

Severe anxiety disorder

Claustrophobia or anxiety in enclosed spaces (if severe enough to interfere with chamber procedures)

Inability to comply with study procedures or safety requirements

Any medical or psychological condition that, in the judgement of the investigators, may increase risk or interfere with study participation
15,[25],"This study examines the short-term respiratory and cognitive effects of exposure to ultrafine particles (UFPs) generated during typical household cooking. Healthy adults will complete two 6-hour sessions in a controlled exposure chamber at the University of Illinois Chicago: one control day with clean indoor air and one exposure day during which standardized cooking (frying potatoes and grilling beef) is performed by research staff. Participants will not cook or handle food. Lung function will be measured using peak expiratory flow (PEF), and cognitive performance will be assessed using validated tests including the Hopkins Verbal Learning Test-Revised and the Processing Speed Index from the WAIS-IV. Airborne particle and gas concentrations in the chamber will be continuously monitored to ensure that exposures remain within levels typical of everyday home cooking. The clinical interventional trial will include 180 participants, who agreed to participate in the clinical study and, who meet specific health criteria. The main questions the study seeks to answer are: whether increased exposure to PM0.1 and noise is linked to higher cardiovascular and metabolic risk; and whether short-term healthy lifestyle changes can improve biological markers associated with these conditions.

Participants in the clinical trial will be randomly assigned to one of three groups: (1) control group continuing usual habits, (2) physical activity group at least 30-minute daily walks in green spaces, or (3) group adherence to a Mediterranean diet. They will have two visits to the clinic for health surveys:

* Wear a wristband sensor for 7 days to monitor physical activity, heart rate, and sleep quality
* Visit a clinic on Day 1 and Day 8 for measurements (blood pressure, waist circumference, body composition) and give blood samples for biomarker analysis.

This research will provide new evidence on environmental health risks and practical recommendations for reducing the burden of metabolic and cardiovascular diseases.",[88,89,28,90,91],"Cardiovascular Diseases (CVD)","Metabolic Syndrome","Environmental Exposure","Health Behavior Change",[93,94,95,96,97,98,99],"ultrafine particles","noise pollution","cardiovascular risk","metabolic syndrome","physical activity","Mediterranean diet","environmental exposure","RECRUITING","2025-11-21
2025-11-28
2025-10-24
2028-12
Regina Grazuleviciene",2]
